We begin by gathering the mostly still green fruit and some just beginning to show shades of what we call “cherry.” Then they are placed into the waiting bins that will ultimately head to the mill at Frantoio Grove just a few hours later for pressing under the continuing watchful eye of Pat Martin, olive miller extraordinaire! \u003cspan class=\"Apple-converted-space\"\u003e \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThe earliest varietal is Favalosa, native to Italy, grown on a trellis system for easier picking. These trees are now 6 years in the ground, and have again produced oil with intense, bright fruitiness and green characteristics that is very high in polyphenols producing that requisite “pungency” we all look for in \u003ci\u003eOlio Nuovo\u003c\/i\u003e. I should say, I am enamored with this variety and think it continues to produce some very luscious, full-bodied oils…Yay!\u003c\/p\u003e\n\u003cp\u003eBut for now, let’s get to what we are here to announce…the blending of the 2025 KATZ December’s New Oil, Olio Nuovo. As always, it is bottled unfiltered, and this year is a blend of 80% \u003ci\u003eFavalosa\u003c\/i\u003e from the November 4\u003cspan\u003e\u003csup\u003eth\u003c\/sup\u003e\u003c\/span\u003e pressing together with some lovely green new harvest \u003ci\u003eFrantoio\u003c\/i\u003e oil from our friends and collaborators at Frantoio Grove.\u003cspan class=\"Apple-converted-space\"\u003e \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThe finished elixir does not lack for pungency and intense fruitiness which are the requisite notes for new oil.
